FISH SOUP
Ingredients:
2–3 units or 1 kg of miscellaneous fish (zander, sea pike, salmon, trout, perch)
4 onions
1 parsley root
2 bay leaves
4 potatoes
10 peppercorns
1 tsp. of ground allspice
A handful of salt
50 g of vodka
Method:
When simmering fish, it is better to wrap it in a clean, unused gauze since this will prevent debris from getting into the soup. To prevent the gauze from unrolling while simmering, tie or wrap it with a thread. Put fish to simmer in a 3 l pot of water. Simmer it for 15 min and add diced potatoes as well as sliced carrots. Once it comes to the point of boiling, add chopped onions to the pot, and finally, bay leaves, the rest of spices and pour in some vodka. The fish soup must be simmered until all the ingredients become tender. In the end, fish wrapped in gauze are picked out and thrown away. It tastes fantastic when served with sour cream.
