Slow cooked smoked oxtails stew in red wine

Ingredients:

3 kg oxtails

1 pc italian fresh bread

50 mml olive oil

750 mml red wine

5 onions

1 tbs black pepper

5 tbs salt

1 tbs of smoked paprika

1 tbs turmeric

1 tbs cumin

1 tbs coriander

5 garlic cloves minced

10 pcs mushrooms

2-liter water

3 pcs carrots

3 pcs paprika

1 pc zucchini

1 pc leek

100 gr parsley

 

Method:

Bind the oxtails and prepare to smoke for 2 hours over the fireplace. After two hours take it off from the fireplace and cut it. Heat the pot, add olive oil, and put cut oxtails into the pot. Sear for 10 min on all sides. Add wine, spices, and hot water. Stew on low heat for 3 hours. Add prepared vegetables and mushrooms and stew for 30 minutes. While boiling, prepare bread for serving. After 30 minutes put chopped parsley and put oxtails stew in prepared Italian bread.
