Lithuanian spit cake (Šakotis)

Ingredients:

40 eggs

1.2 kg of sugar

1.3 kg of flour

1 kg of butter

0.6 l of cream

Method:

In a large bowl, whisk butter together with sugar using a wooden spoon. Each time beat in an egg and add a little cream. Keep whisking until all eggs and cream are used. Then add flour. Whisk everything very well.

Lithuanian Spit Cake (Šakotis) must be baked in front of fire, on a wooden or metal spit that is slightly thinned. The spit must be covered with baking paper and a canvas, tightly secured.

Kindle the campfire with ash or birch logs, without bark. Pour the dough gradually over the spit while turning it continuously. Once the first layer is poured over the spit, bake the dough until it turns yellow, then pour the next layer of dough and so on. The whole rotation process will take approximately 4–5 hours.

Keep the baked Lithuanian Spit Cake (Šakotis) on the spit for approximately 1 hour to cool down, and then, take it off the spit.
